These days it has been snowing here in Milan, and of course all over Italy. So even though this dish is suitable for summer, I somehow made it for it’s colours.

This is a very simple and yet very delicious dish. And she’s right the agave adds this beautiful sweet taste that balances the sharp and stinging taste of the mustard.
Next time I will ad less mustard, it was too much related to how we are used to eat.
This morning I had this thought in my mind. Life has a very strange sense of humor and only few people can understand and laugh at life. Life is never violent with us, even when she puts s through harsh times. It’s her way to help you grow or fall, it’s her way to show you your limits or strength. I look back at my life, and even though I am only 27, I have been through a lot. Most of those things were unpredictable, yet in others I literally threw myself at them. At the end of the day I wouldn’t change a single thing. Thank to all the troubles I learned to appreciate my life. Those problems formed my character and are so much part of me.
Life is beautiful, life is not about laying back down and relaxing, life is about passion, fight and victory. Life is so colourful and each colour is essential for it’s beauty.

quinoa and chickpea based
Ingredients
- Quinoa cooked
- 1,5 cup Chikpea cooked
- 1 Carrot sliced
- 1 Green onion chopped
- 3 Radiches chopped
- bunch Basil chopped
- 1 cup Baby spinach chopped
- 1 tbsp Mustard Djon
- 1 tbsp Olive oil extra virgin
- Half Lemon juice
- Salt
- Pepper
- 1 tsp Agave nectar
Instructions
- Chop and mix all the ingredients in a large bowl.
- Mix well the dressing ingredients (mustard, olive oil, lemon juice, agave nectar, salt and pepper).
- Add the dressing to the salad and mix well.
- Seve it as a salad or main dish.
- Course: Salad
